松茸,學名鬆口蘑,別名松蕈、合菌、台菌,隸屬擔子菌亞門、口蘑科,是松櫟等樹木外生的菌根真菌,具有獨特的濃郁香味,是世界上珍稀名貴的天然藥用菌。
松茸好生於養份不多而且比較乾燥的林地,一般在秋季生成,通常寄生於赤松、偃松、鐵杉、日本鐵杉的根部。四川、西藏、雲南等青藏高原一帶是我國松茸的主要產地,產量四川為首、品質西藏為佳、名氣香格里拉最大。
雲南松茸產量佔全國松茸產量的40%,而迪慶香格里拉松茸占云南省鮮松茸出口量的65%以上。所以,迪慶已成為雲南的“松茸之鄉”。松茸,是迪慶州唯一的大宗出口商品,也是迪慶各族農民脫貧致富的主要經濟來源。
松茸的稀有不僅是因為其成長速度緩慢,也是因為採集困難。松茸一旦突出地面並張開蕈傘,其香氣就會大量逸失,吃起來的味道也變差,經濟價值自然大幅滑落。因此,松茸的採集必須在松茸剛露頭的時候就連根挖出,是一項要求高度的觀察力與豐富的經驗的工作。雖然一直有人嘗試進行商業化的大量栽培,然而迄今仍未有足以量產的成果,所以目前市面上所販賣的松茸幾乎都還是人力上山採集而來的。
Matsutake or songrong (Chinese and Japanese: 松茸, Korean: 송이(Songyi), pine mushroom, Tricholoma matsutake = syn. T. nauseosum = syn. Armillaria ponderosa) is the common name for a highly sought mycorrhizal mushroom that grows in Asia, Europe , and North America. It is prized in Japanese, Korean, and Chinese cuisine for its distinct spicy-aromatic odor.
Though simple to harvest, matsutake are hard to find because of their specific growth requirements and the rarity of appropriate forest and terrain, combined with competition from local folk and wild animals such as squirrel, rabbits and deer for the once-yearly harvest of mushrooms, causing the price to be very high at times or as low as $2 per pound for pickers when the market will bear it.

Matsutake mushrooms are proven to be effective fighting different cancers. Many medications are used to treat cancerous changes in the body but all of them affect the healthy tissue to some extent, causing serious side effects. If these anti-cancer medications kill cancer cells they will most certainly kill some of the healthy cells in the body, because the drugs can't differentiate between healthy and cancer cells.
